Food as national art. A bowl of boat noodles from a Bangkok stall can hold more craft than a tasting menu. And the islands — Railay, Phi Phi, Lanta — define the tropical ideal.

Where should you go?

Bangkok for temples and street food; Chiang Mai for northern temples, cooking schools and hill-tribe craft; Krabi and the Andaman coast for limestone karsts and islands; Koh Samui side for full-moon beach life.

What can you experience?
